Stufato di zucca



Ingredienti per 3 porzioni:

zucca 1
fagioli 200g
mais 70g
cipolla 1/2
sedano 1/2 costa
aglio 1 spicchio
cipollotto 1
carota 1
pomodorini 5
polpa di pomodoro 150g
maggiorana 1 cucchiaino
prezzemolo 1 cucchiaino
paprica 1/2 cucchiaino
peperoncino 1 cucchiaino
salel&pepe q.b.

In una padella scaldare l'aglio e la cipolla con un filo d'olio. Quando si dorano aggiungere la carota e il sedano tagliati a pezzetti, poi i pomodorini tagliati a metà. Versare la zucca pulita e fatta a tocchetti, la polpa di pomodoro, i fagioli, il mais e la maggiorana. Salare, pepare secondo i propri gusti e infine aggiungere la paprika e il peperoncino. Se si asciuga troppo aggiungere un pò di acqua. Portare a bollore, abbassare la fiamma e lasciar cuocere fino a quando non diventa una salsa densa. A fine cottura mettere il cipollotto tagliato. Intanto a parte cuocere del riso basmati a vapore e servire insieme con del prezzemolo fresco tritato sopra lo stufato (in alternativa si può mettere del formaggio).

Pumpkin stew



Ingredients for 3 portions:

pumpkin 1
black beans 200g
corn 70g
onion 1/2
celery 1/2 stick
scallion 1 stick
carrot 1
little tomatoes 5
tomato sauce 150g
marjoram 1 tsp
parsley 1 tsp
paprika 1 tsp
chilli powder 1 tsp
salt&pepper to taste


Saute onions and garlic until gold in olive oil in a pan. Add carrot and celery chopped, then the tomatoes cutted in half. Put the pumpkin washed and diced in the pan, and the other ingredients: tomato sauce, beans, corn and marjoram. Salt and pepper to taste and finally add paprika and chilli powder. If it's too dry, put some water. Bring to boil, turn down to a simmer until the stew become a dense sauce. At the end add chopped scallion. Serve with some boiled basmati reis and sprinkle fresh chopped parsley on the stew (as an alternative put some cheese).

Zucca in hummus



purea di zucca q.b.
ceci 240 g
tahina 2 cucchiaini
aglio 2 spicchi
olio q.b.
succo di 1/2 limone
prezzemolo q.b.
sale q.b.
peperoncino q.b.
cumino q.b.

Frullare i ceci con tutti gli atri ingredienti e aggiungere la purea di zucca secondo i propri gusti. E' un ottimo pinzimonio e si può usare anche per condire altri piatti come carne o insalate.

Pumpkin hummus

pumpkin puree to taste
chickpeas 1 can
tahini 2 tsp
garlic 2 cloves
1/2 lemon juice
olive oil to taste
salt to taste
parsley to taste
chilli powder to taste
ground cumin to taste


Place the chickpeas with the other ingredients in a food processor and process until smooth and parsley blended. Add all the pumpkin puree you desire. It's a good dip that you can use also on meat dishes and salads.

Muffins di zucca e miglio



Ingredienti per 12 muffins:

farina 2 tazze
fiocchi d'avena 1/2 tazza
zucchero di canna 3/4 di tazza
yogurt bianco 1 tazza
olio di riso 1/3 di tazza
uova 2
purea di zucca 3 tazze
miglio 1/2 tazza
semi di zucca 1/4 di tazza
uvetta 1/2 tazza
lievito 3 cucchiaini
bicarbonato 2 cucchiaini
essenza di vaniglia
cannella 1/2 cucchiaino
zenzero 1/2 cucchiaino
noce moscata 1/4 di cucchiaino
sale 1/2 cucchiaino

Accendere il forno a 200°. Scaldare il miglio in un pentolino antiaderente fino a quando nn diventa quasi marroncino. In una ciotola mischiare gli ingredienti umidi: uova, zucchero, latte, olio, yogurt, vaniglia e la purea di zucca. In un'altra ciotola mettere gli ingredienti secchi: farina, lievito, sale, bicarbonato, spezie varie, i fiocchi d'avena e l'uvetta. Unire delicatamente gli ingredienti umidi a quelli secchi, stando attenti a non mescolare troppo. Versare il composto negli stampini da muffins e ricoprire con i semi di zucca. Mettere in forno e abbassare a 180°. Cuocere per circa 30 minuti.

Pumpkin Millet Muffins

Ingredients for 12 muffins:

flour 2 cups
rolled oats 1/2 cup
brown sugar 3/4 cup
yogurt 1 cup
rice oil 1/3 cup
eggs 2
pumpkin puree 1 can
millet 1/2 cup
pumpkin seeds 1/4 cup
raisins 1/2 cup
baking powder 3 tsp
baking soda 2 tsp
vanilla extract
cinnamon 1/2 tsp
ground ginger 1/2 tsp
ground nutmeg 1/4 tsp
salt 1/2 tsp


Preheat oven to 390F. Toast millet in a dry skillet until lightly browned. In a bowl, beat together wet ingredients: eggs, sugar, milk, oil, yogurt, vanilla and pumpkin puree. In a separate bowl mix the dry ingredients: flour, baking powder, salt, baking soda, spices, rolled oats and raisins. Gently pour wet ingredients into dry remembering not to over mix. Pour the batter into muffin tins and Top with pumpkin seeds. Place in oven and reduce temperature to 360F. Bake for about 30 minutes.
